Description: A delicious dessert we discovered in school while studying India. "Indians love to eat sweets. At times, they even offer them to their deities! There is an endless variety of desserts from which to choose. Many Indian desserts are made by boiling milk with sugar and cardamom pods until only a thick syrup is left. Different fruits are then added to this liquid. The resulting desserts have a fudge-like quality. The recipe for Indian ice cream, called kulfi, has been simplified to eliminate the boiling of milk. This simpler version can be made safely and easily. The result is almost the same." ("India, the Culture" A Bobbie Kalman Book) The texture of this is amazingly like real ice cream. The kids and I already have ideas of how to vary it to make some great homemade ice cream flavors, which is a real treat in a country where ice cream can be expensive and fewer flavors available.
Ingredients: 1 can (1 1/4 C.) sweetened condensed milk 1 small can (3/4C) evaporated milk (Can't get in Korea but regular milk is a good substitute) 1 C whipping cream 1/2 C almonds (or other nuts) 1/2 C mango, blueberries, peaches, kiwi, strawberries, bananas or other fruit
Directions: Put all the ingredients into a blender and blend well. If you are using blueberries, you may want to stir them in at the end. Pour mixture into a shallow plastic dish with a lid. Freeze until the ice cream is solid.
